This wine is fermented spontaneously. Made from indigenous grapes. Hand-harvested into small bins. De-stemmed, pneumatic direct press. Spontaneous fermentation in stainless steel. Aged in stainless steel and cement tanks. Bottled with minimal sulphur and without fining. Little refermentation in the bottle.
